Vegan Fried Rice
1 ½ - 2 c. of day old cooked brown rice
1 c. total of frozen (or fresh) veggies:
Carrots, Edamame, and corn
1 T. Canola oil
In a small bowl mix:
1 T. Low-sodium Soy sauce
1 t. Black pepper
1-2 T. of garlic chili sauce, recommended Sriracha
Pinch of salt (optional).
Heat the wok on high heat, medium-high heat if you have an electric stove, add the canola oil. Make sure the wok is hot enough before you add the frozen veggies*
Cook the veggies for a few minutes; they don’t have to be cooked all the way just yet.
(Make sure you stir and move everything around vigorously or it will burn & stick to the wok).
Season the veggies with half the amount of liquid mixture, stir.
Add brown rice. Stir for a few minutes then add the rest of your liquid mixture.
Cook until rice and veggies are slightly charred, ~ 5 to 10 minutes. Remember to keep stirring.
*One way you can tell if a pan is hot enough is to look for a slight (very faint) smoke come off from the oil.
"Re-Fried" Black beans
Long usually makes this part of the burritos.
He saw Rachel Ray , on the rare occasions that he watches Food network, making taco fillings and thought it was a neat idea to make your own "refried" beans.
The good news is that it has replaced our store bought refried beans.
The bad news is that he eyeballs everything that he makes. I tried looking for the exact recipe, but to no avail, so this recipe is Long's "eyeball" version of Rachel Ray's.
1 T. of Canola Oil
1 (15 oz.) can of black beans, drained and rinsed.
1/2 a yellow onion, chopped.
Spices:
1 T. of each Chili powder and cayenne pepper,
1 t. of each Cumin & black pepper
Tapatio (Long adds almost 1/4 of the bottle, but I suggest you add just 1/2-1 T.).
Heat a nonstick skillet on medium-high heat.
Cook onions until translucent.
Add 1/2 of the black beans to the skillet.
Mash the other half with a fork in the can (add a little water to get a smoother texture). Then add that half into the skillet as well.
Add spices and Tapatio, stir and cook for 3-4 minutes.
Layer the fillings on a flour tortilla, top with Nutritional Yeast and Enjoy!
